Shrimp w/Peppers & Rice

 
 
2 bags of Large 41-60 Cooked shrimp w/tails on, deveined
9 Mini Sweet Peppers, sliced (These come in a bag by Pero)
4 c. cooked white rice (of course you can use brown, or any other kind of pasta you want)
6 tsp. of Lemon Juice
Lemon Pepper Seasoning (NOT salt)
Seasoning Salt
Garlic Salt
1/2 T. Olive Oil (optional)
1/4 onion, chopped (I would have used more but my hubby doesn't like onions)
 
Since the shrimp are pre-cooked I just warmed them up with some hot water.  Drain and place them in a bowl with 3 tsp. of lemon juice & olive oil.  Add the lemon pepper seasoning, seasoning salt and garlic salt to taste.  I used the garlic salt sparingly, and went a bit heavier on the lemon pepper seasoning.  Chop the peppers & onions into slices and mix into shrimp mixture.  Spread on baking sheet and bake at 400 for about 10 minutes.  Place over 1 cup of rice and enjoy!  I then put the other 3 tsp. of lemon juice on top of mine, this is an optional step.

English Muffin Pizza w/ham & mushrooms:



1 English muffin
1 1/2 T. pizza sauce (divided between the two sides)
1 slice 97% ff cooked ham (torn in half)
1 slice Velveeta Blanco Queso cheese (substitute any cheese you like)
2 T. sliced mushrooms from a can
A few slices of onion on each side

Spread the pizza sauce on both sides, top with the mushrooms and onions. Sprinkle with a bit of Italian seasoning & a tiny bit of garlic salt. Add the ham & cheese & bake on 350 for about 15 minutes.

Tostadas:

 
 
2 Mission Tostadas
2 T. refried beans
1/2 Roma tomato diced
2 T. black olives, sliced
2 T. onions, chopped
A few jalapeno's for the top (optional)
1 T. Taco Sauce (I used Pace, mild)
2 T. Mozzarella cheese
 
Spread the beans on top of the tostada (1 T. on each).  Top each with 1 T. of the cheese & bake on broil (Low) for about 5 minutes, just until cheese is melted.  Take out of oven & then top with remaining ingredients, dividing between the two tostadas.

Pineapple fluff:

I didn't get a picture of it this time, but next time I will. 

1/2 c. crushed pineapple in 100% juice (drained slightly)
1/2 c. light whipped topping
1-2 packets of Equal (optional)
Mix together, chill & eat.  I didn't even bother to chill it, I ate it as soon as I mixed it, but either way is probably good.  I added the Equal b/c to me it wasn't sweet enough w/o it, but you may like it w/o the Equal. Yummy sweet treat.
